Miyabi 5000MCD Rocking Santoku 18cm is a flexible and multifaceted santoku knife. Made with MC63 steel core a total of 101 layers and a CRYODUR ice-hardened blade with a hand-blade according to traditional Japanese knife production.

The traditional Honbazuke honing means that the blade is sharpened and polished by hand in three complex stages: coarsely ground with a vertically rotating sharpening stone, fine honing with a horizontal rotating sharpening stone and finally polishing the edge with a leather stropping block. This handwork makes sharpness scalpel-like.
